THE EXCEPTION CREATING THE EXCEPTIONAL

We go to great lengths creating an exceptional product – bio-farmed, ethically raised, meticulously processed – our lamb is our pride and joy.

Exporting directly to restaurateurs, chefs and fine meat purveyors around the globe, we also sell domestically to select clients.

Superb eating

Provenance lamb’s delicate flavour stands apart from traditionally ‘gamier’ New Zealand fare. A subtle sweetness complimented by ‘nutty’ (some say herbaceous) undertones, speaks of the unique terroir from which the lamb grows.

This distinctive taste is enhanced through sensational mouth feel. Silky smooth texture and fine marbling deliver wonderfully succulent, tender meat, with a clean finish on the palate.

Our farms grow mixed pastures of herbs and grasses, so that all essential nutrients are available to the animals

Healthy choice – quality

Consumers are increasingly conscious of the health benefits of eating well. Provenance lamb is the healthy choice for chefs who are looking to gain the edge in their red meat offering.

Nutritional value, omega and pH levels, colour, texture and other indicators of healthy meat are all carefully monitored through randomized, independent testing.

Our lamb is guaranteed GMO, hormone and antibiotic free, and contains no artificial ingredients or colouring.

Likewise, freezing is a proven method for safely storing and transporting meat without damaging tissue integrity. Alternatively, in season, we can ship to you fresh while ageing in transit.

The end result is lamb of outstanding quality that chefs can confidently present to discerning diners.

Bio-farmed – ethically raised

Consumers and forward thinking chefs are also interested in the ethics of food production – land and water use, the quality of life for animals.

Our lambs live well because they are fed well and cared for at each stage of their life.

Almost all New Zealand sheep are grass fed but it is the nutritional value of the pasture that makes the difference.

It all starts in the soil. Our comprehensive farming protocols ensure the biological life of the soil is replenished. Sustainable land use is helped by natural inputs, minimal use of fertilizers and careful grazing. Living soil grows nourishing forage. The result is exceptionally healthy animals.

More than feeding our lambs well, we look after them humanely and with respect. Our lambs are especially selected to thrive in their environment. They are raised and cared for on extensive New Zealand farms, freely ranging across hills and paddocks as they graze. When it comes to transporting and processing, every care is taken to make sure our lambs are stress free.

Farming with the natural rhythms of nature like this, makes for a better world – it also makes for superb meat.

Proven origin

Suppliers, chefs and consumers require complete assurance of brand integrity. We believe it is crucial we meet this expectation through guaranteeing the traceability and safety of our product.

Breakthrough technology developed by Oritain New Zealand has given us the opportunity to uniquely identify and prove the provenance of our lamb.

The unique nutritional value of our land and pasture is passed into our lambs. This is measurable. In the past we have used Oritain’s patented ‘farm of origin finger print’, the trace element profile of the land can be found in the lamb to precisely identify the supply farm. *

‘Provenance’ is about origins. Like everything else in our supply chain, standing behind this apparently simple idea is a huge attention to detail and a commitment to ensure our clients enjoy only the best.
